TWO WORLDS COLLIDE AT YUM SING HOUSE FOR A TRUE FUSION FIESTA

Known for its crave-worthy cuisine and tea-soaked cocktails, Yum Sing House is pushing the flavour boat out even further for its next event, with a feast of flavours inspired by the flavours of Hong Kong and Mexico and paired with incredible tequila offerings from Agave Lux. Taking place on Friday 5 May for one night only, this very special dinner will see five unique courses being matched to a series of tequilas.

 

Head chef Aiven Lee (who was previously a sous chef and Melbourne institution, Mamasita) said the menu he has created for the night celebrates two vibrant cultures, both with their own unique flavours and techniques, but with commonalities that speak to the universal appeal of good food. “I’ll be preparing dishes like Cantonese-roasted duck breast and mole in a blue corn tortilla, char siu pork with jalapeno salsa and hominy puree, and banana leaf-wrapped king prawns with salsa negra, which uses many of the same ingredients – black garlic, different chillies, cumin – I use in Hong Kong-style dishes,” said Aiven.


“We know our customers are generous consumers of tequila, so this is a great opportunity to share our knowledge on how it pairs beautifully with food. “It might upset the purists, but I’m very excited about taking some of the best flavours from two cuisines I love and bringing them together in a succession of dishes.” Each course will be matched to either a sipping tequila or specially created cocktail, using spirits from Agave Lux. This Australian company owns tequila and raicilla distilleries in Mexico and partners with small Mexican communities to bring local drinkers a taste of premium, small batch agave spirits.

On the night, Agave Lux will be highlighting its El Cristiano tequila range, made by third-gen master tequila distillers. Cocktails developed for the night include El Jardin, which blends cucumber, matcha and mezcal, and black sesame horchata. Cinco de Mayo Tequila Tasting Event
